Sanitary tests

SANITARY TESTING remains one of the ways to:

  • control hygiene and cleanliness
  • identify contamination sources in case of negative microbiological test results.

The obligation of sanitary testing is derived from food sector regulations and remains one of the ways to verify functionality of the HACCP system at a production plant.

Samples should be collected on a regular basis and their frequency should be based on the timetable discussed with the veterinary or sanitary inspection.
Sanitary samples should be collected from specific spots:
• production rooms. storage halls, sale areas and communication lines,
• machines and devices producing and distributing foodstuffs,
• sinks and water closets,
• tables for cutting up, portioning and packaging,
• packages, containers, plates etc.,
• tools and small devices used for production and sale of grocery articles;
• employees' hands at each level of production and sale
                                                                 

 

We conduct sanitary tests with the following methods:
• contact plates,
• classic smear tests,
• PATH CHECK smear tests, i.e. quick test to detect pathogenic organisms
• smear tests for the presence of ATP to check the effectiveness of washing and disinfecting of surfaces, devices and tools.
